These Cookies are so delicious and healthy that you want and can enjoy them anytime - even for breakfast. We actually call them now "Anytime mum allows you to eat them cookies" as they are so popular and don't last long. Made with almonds. chia seeds, healthy fats and with the option of a bit of chocolate for some more decadence . Sweetened with bananas and apples , they give you long lasting energy.

Ingredients

300 g Almond flour or ground up almonds (activated almonds recommended)

1/2 cup Chia seeds

1 tsp Baking Soda

2 Bananas

2 Apples, cored

1 cup Almond butter

1/4 cup Unsweetened Coconut milk/cream

1/4 cup Coconut oil or butter, melted

1 tsp Vanilla

Optional

1/2 cup Dark Chocolate (at least 72% cocoa), roughly chopped

2 tbsp Honey or Maple Syrup

Directions

Preheat oven to 170 degrees and line two to three large baking sheets with parchment paper.

In a food processor/blender grind the chia seeds into a finer consistency.

In a medium sized bowl combine the dry ingredients (almond flour, ground up chia seeds, chocolate pieces if using, baking soda and salt).

In your blender or with a fine grater puree bananas and apples. Add all other wet ingredients (almond butter, coconut milk or cream, coconut oil or butter, vanilla, honey if using) and blend into a smooth texture.

Add the wet ingredients to the dry ingredients and stir until well incorporated. The dough should be sticky.

Using a couple of tablespoons, scoop one heaping tablespoon of batter at a time onto baking sheet, leaving 2 inches or more of space between cookies. This should make around 50 cookies.

Bake in oven for around 10 minutes, Allow to cool for 5 minutes on baking sheets, then transfer with a spatula to a wire cooling rack and cool.

Once cooled, serve immediately or store in an airtight container in your refrigerator for up to a week.
